Gas marks in °F and °C
The gas mark scale steps 25 °F at a time. The exact Celsius values are awkward numbers, so UK recipes and oven makers round them to the nearest 10 °C, mostly.
| Gas mark | °F | Exact °C | °C in UK recipes |
|---|---|---|---|
| ¼ | 225 | 107 | 120 |
| ½ | 250 | 121 | 130 |
| 1 | 275 | 135 | 140 |
| 2 | 300 | 149 | 150 |
| 3 | 325 | 163 | 160 |
| 4 | 350 | 177 | 180 |
| 5 | 375 | 191 | 190 |
| 6 | 400 | 204 | 200 |
| 7 | 425 | 218 | 220 |
| 8 | 450 | 232 | 230 |
| 9 | 475 | 246 | 240 |
Exact °C is from Electrolux; the recipe column is from Smeg’s and Which?’s charts. The rounding means the recipe column jumps 20 °C from gas mark 3 to 4 and from 6 to 7, while the real steps are all the same size.

“Gas 4” in a British recipe means gas mark 4: a moderate oven. With an electric oven, use 180 °C or 350 °F. With a fan oven, UK charts take about 20 °C off the recipe column, so 160 °C; see fan oven temperature.
